The Corvina is a native black grape variety of the Verona area and a fundamental basis for Valpolicella wines, among which the most famous Amarone della Valpolicella. Amarone della Valpolicella is a dry red wine DOCG produced exclusively in Valpolicella in the province of Verona. In the composition of the grapes can be present in the measure from 45% to 95%. It is also possible to produce wines using only Corvina Veronese as a blend, they are no longer included in the Valpolicella specification but are IGT. The grapes can be vinified both fresh and dried.
