Soave

Soave is a white DOC wine produced in the province of Verona. Soave alone accounts for its 500,000 hectoliters for 40% of the DOC production of the province of Verona, where 14% of the Italian DOC and 60% of the Veneto DOC are concentrated. The wines produced in the Soave DOC are: Soave DOC, Soave Classico DOC, Soave Superiore DOCG, Recioto di Soave DOCG. In 1931 the first decree delimiting the area was proposed and Soave, the first of the Italian wines, was recognized as "typical and precious" wine. Garganega and Trebbiano di Soave, as we know them today, are the result of a long natural interaction between the vine and the environment to which the man has given a particular contribution in recent years. Garganega does not possess a marked aromatic quality, but a small patrimony of perfumes of which almond and white flowers are the clearest; it has a very long biological development, so much so that it matures in October; it has a hard and particularly yellow skin (almost red) when it is ripe. It does not have a preponderant acidity but rather an interesting balance of extracts and sugars. The Trebbiano di Soave historically very present in the vineyards has left more and more place to the exuberance of Garganega. Only in the last few years has it been re-proposing itself as an ideal partner to trace new enological profiles for the Soave of the future, combining its sapidity and vivacity with the structure and density typical of Garganega.
