Champagne Brut Nature 'Les Hautes Chèvres' by Georges Laval is a pure Pinot Meunier, coming from old vines of the Cumariot area raised in organic farming and is vinified only in the best years, from a careful selection of the grapes. Alcoholic fermentation takes place in foudres, refining in oak barrels for 10 months, resting on the lees for 48 months and resting in the bottle for 3-6 months. It is a Brut Nature, with no added dosage liquor. A Blanc de Noirs of great expressiveness.

Rècoltant-manipulant of Cumières, a small village north-west of Epernay, in the Vallée de la Marne, the Georges Laval maison has steadfastly pursued a philosophy of completely organic agriculture since 1971, which today earns it the ECOCERT certification. The management of the company is carried out by Vincent Laval, who carries out the work of vigneron continuing in the wake of his father's activity, however interpreting each harvest personally, preserving the nature and the environment that surround the vineyards, limiting himself to accompanying the Champagne in a path where man has to do very little.
The vineyards owned today extend for a total of about 2.5 hectares - of which about one hectare belongs to the parcel "Les Hautes Chèvres", a vineyard dating back to 1930 and one of the oldest in the entire Cumières terroir - and are planted with the classic AOC grapes, that is chardonnay, pinot noir and pinot meunier. The vineyards are all south facing and fall within the Premier Cru classification; about half of them are over 30 years of age. Obviously, organic farming practices are followed between the rows, but not only: to prevent pesticides used by hypothetical neighbors from contaminating the vineyards, the Georges Laval winery also treats an extra thirty acres not owned by it with its own products, so as to ensure a continuity of extension to organic.
Vincent Laval processes about 9,000 bottles a year, pure and complex Champagne, characterized by a beautiful mineral length, which are able to reflect with authenticity and clarity the profile of their terroir of origin.
