Champagne Extra Brut 'Les Beaux Ceps' by Mignon Boulard, 100% organic Pinot Noir, is the purest expression of the terroir that a winemaker is capable of producing: from harvest to aging, including vinification, everything was done in and under the plot: in the heart of the Maison there is a small cellar, dug under the vines. It has been a witness to History and a strong symbol of the family bond with the land. In this cellar Cirillo placed two stoneware amphorae to vinify the grapes harvested on the surface. Once ready, the bottles were placed on staves in this small basement to age the terroir under the terroir. A unique wine fresh, mineral, precise and refined. Soft and fresh taste, with a light and pleasant oxidation on the finish that is linked to an excellent persistence and balance.
