Barolo 'Gavarini Chiniera' by Elio Grasso is an elegant red with a remarkable aromatic intensity, long-lived and complex. It comes from Nebbiolo grapes, the fruit of approximately 35-year-old vineyards from about twenty hectares of vineyards, divided into different parcels, cultivated in splendid hilly exposures and vinified separately to enhance the qualities of each terroir. The wine ages in Slavonian oak barrels for 24 months and completes the refinement with 10 months in the bottle. It is a traditional Barolo that highlights the extraordinary qualities of the Monforte d'Alba vineyards. Elegant aromas of dried rose petals, violets, delicately spicy hints, on a background of small red berried fruits. It is a great aging red, it has a longevity of about 20 years.

Elio Grasso has his cellar in Località Ginestra in the municipality of Monforte d'Alba, in the heart of the Barolo appellation. Interesting reality of a family nature, with vineyards that have been handed down from generation to generation, together with the precious peasant experience of cultivating the land. It produces a range of wines with a classic style, in full respect of the traditions of the territory. The strong link with the roots and with history has led Elio Grasso to put respect for ancient customs back at the center of his work, with the intention of returning to producing wines faithful to the great local terroir. Only 18 of the 42 hectares of the estate are dedicated to viticulture while the rest is left to woods and meadows, to create an environment rich in natural biodiversity. The company philosophy wanted to preserve a typically peasant soul, linked to the land, nature and its ancestral rhythms. Thanks to a deep knowledge of the territory and with the desire to enhance the characteristics of each single parcel, since the 80s each vineyard has been managed, harvested and vinified separately, in order to be able to present a range of labels, which highlight the various facets of the terroir. The cellar has been equipped with small tanks for parcel vinification, which takes place in a simple and delicate way. The same care is applied to the refinements, which are made by leaving the wine all the time necessary to slowly evolve before being bottled.
