'Bolignano' by Cantina Castellani is a Conero Riserva, made from pure Montepulciano grapes, an intense and complex red wine. In the vineyard, minimal doses of copper and sulfur and biodynamic treatment of the soil. The manual harvest is carried out by selecting the best bunches, after the second ten days of October. Fermentation follows with maceration on the skins for 8-10 days and refinement in French oak tonneaux and finally in the bottle. Intense aroma of ripe red fruit, jams, spicy notes with hints of vanilla. Pleasant sensations of ripe fruit and black cherries in alcohol are found on the palate. Spicy, it expresses a great structure, dry, warm, soft, fine, with velvety tannins and excellent persistence. Perfect as an accompaniment to first courses of the Marche cuisine, roasts, grilled red meats, game, mature cheeses.

Castellani Winery, although small in size, was designed and built according to the architectural and technological standards of large modern wineries. In the rear and upper part, we have the grape reception area, where the grapes from the crusher-destemmer go directly into the fermenters located at the lower level by gravity. From this processing area, after fermentation in modern stainless steel vats at controlled temperatures, the wines pass into the barrel room for refinement in small and medium barrels of selected French oak.
