Cerasuolo d'Abruzzo 'Fosso Cancelli' by Ciavolich is produced from the vineyards of Loreto Aprutino using integrated agriculture. Producing artisanal wines with native varieties is one of the reasons that drove the winery to produce this pure Montepulciano. The grapes are rigorously hand-picked and then pressed and left to ferment in old cement vats. Then it was time for bleeding in amphorae, with the addition of indigenous yeasts where the tumultuous fermentation continued. This Cerasuolo is a slightly intense vivid red, with a variegated aroma of ethereal hints of ripe fruit. Decisive and personal to the taste, balanced in freshness and flavor and rich in body and extracts. Excellent when paired with red meats, mature cheeses and first courses of the land. Approximately 5,000 bottles are produced, numbered on the label.

Ciavolich is a family-run business that has been cultivating vineyards in Abruzzo for generations. The family’s history is very ancient. Wool merchants of Bulgarian origin, the Ciavolichs arrived in Italy during the 16th century and settled in the town of Miglianico. The first winery was created in 1853, to vinify the grapes from their own land. Over the generations, the estate has expanded especially in the wonderful area of Loreto Aprutino. Today the estate is managed by Chiara, who carries on the family tradition with passion and expertise. The core of the company has moved to Loreto Aprutino, in Contrada Salmacina, in one of the areas of Abruzzo most suited to viticulture, in a hilly area at 250 meters above sea level, a few kilometers from the Gran Sasso massif and the Calderone glacier, as well as from the Adriatic coast. The climate is mild and sunny, very bright and always windy, with significant temperature variations between day and night temperatures. The soils are clayey and silty in nature, with the presence of sand, very suitable for high-quality viticulture. In these favorable conditions, the vines bring to maturity perfectly healthy bunches, with very rich and intense aromas. The vines historically present in the area are grown between the rows, in particular Pecorino, Trebbiano and Montepulciano.
