Sauvignon Blanc by Gilfenstein is made from Guyot-trained vines on clay and sandy soils at a height of 400 meters above sea level, in Alto Adige. Once ripe, the grapes are processed in a controlled atmosphere to preserve their aromatic component. Fermentation takes place in steel tanks at a controlled temperature, at 16°C. This low temperature processing contributes to a unique flavor and aroma. Bouquet with extremely fresh and intriguing scents, with notes of exotic fruit, citrus, aromatic herbs and tomato leaf followed by a trace of flint in the background. When tasted, it is intense and savory, characterized by vibrant acidity and a bitter finish.
