Saint-Aubin 1er Cru 'Les Castets' by Henri Prudhon & Fils is produced in the Côte De Beaune, Burgundy. The vineyards are about 20 years old and rest on clay and limestone soils, rich in fossils. The style is ultrapure and completely classic. Manual harvest and soft pressing, spontaneous fermentation with indigenous yeasts in used French oak barriques. Barrel aging is 12 months, during this period approximately 25% new oak is used. Skilful application of wood on the citrus aromas of green apple and acacia flowers. The impression on the palate is refined, the intensely stony and saline-infused finish is clean, dry, concentrated and much more complex. Dry but not austere, truly remarkable, worth trying.

Brothers Vincent and Philippe Prudhon manage the family domaine respecting the work carried out by previous generations. The company, founded after the Second World War at the hands of grandfather Henri, arrived at direct bottling in the early 1980s at the push of father Gérard, growing little by little even in the vineyards. Today the Prudhons own over 14 hectares of vineyards, with 60% Pinot Noir and 40% Chardonnay, distributed between the Village and Premier Cru denominations in the municipalities of Saint-Aubin, Chassagne-Montrachet and Puligny-Montrachet.
