Orvieto Classico Superiore 'San Giovanni della Sala' by Antinori is produced in the ancient Castello della Sala from the union of native Grechetto and Procanico grapes with those of Pinot Bianco and Viognier to tell the story of Orvieto Classico according to a new style. The grapes are vinified separately to enhance the varietal characteristics. Cold maceration in contact with their skins, soft pressing and fermentation in steel at a controlled temperature. The wine remains on its lees for several months in order to improve structure, elegance and minerality until the moment of assembly and subsequent bottling. Straw yellow color with light greenish reflections. On the nose it shows floral and ripe fruit scents such as peach and pineapple. On the palate it is enveloping, balanced, persistent and supported by a good freshness.
